Just as an aside .......................apart from cooking the beetroot dauphinoise last night I cooked sea bass - in the past I've either pan fried it (difficult when it's a whole fish) or cooked it in the oven. Last night I poached it in some fish stock, white wine and a squeeze of lemon. It certainly looked delicious (i don't really eat much fish) - it was quick and simple and Mr Woo loved it!

While we are talking food, I'm going to bake a cake tomorrow to take to my daughter's place on Sunday. It's an upside down apple cake with homemade chocolate mousse in the middle and a chocolate covering.

 

That sounds positively lovely - chocolate and apples a real good combo IMO.

Ohhhh, I have loads of apples to use up, and this sounds divine. Do you have a recipe cologne?

I've discovered something fool proove. Get your kitchen scales and break 3 eggs into them. Whatever the weight of the eggs, match with self raising flour, butter and sugar. Bit of grease proove in the bottom of the tin, brown sugar and two layers of apples, plus the mix on top. Once cool, slice in half, spread your chocolate mousse, melt a big bar of proper chocolate with some butter and cover cake.
