Some info on the start of tonight's episode as that clashes with the end of the Bake Off final.
Marcus sets the skills test for two of the chefs, asking them to break down a rack of pork into chops, French trim one and cook it with a Spanish-style butter bean stew, BBC clip of him doing that is available:

At the end of the last episode we saw Gregg aghast as Tasoula chops away at the rack of pork, will she lose any fingers?
And we saw Anna flinching at what Shane was doing to the pork.
Anna sets the other test to prepare a plate of tempura vegetables with nori seasoning and a Japanese-style chilli mayonnaise.
The two chefs for that are Daniel and Mo.
