Both words have been used on cooking programmes before. It's thought that spatchcock may come from a way of preparing a chicken etc after it has been despatched. There's another word spitchcock which is a way of preparing an eel. Beignet is a French word for a type of doughnut (one of the recent Bake Off technical challenges was a beignet soufflé)
