Tomorrow a plaque will go up in Winchcombe (to the north east of Cheltenham) in memory of Christopher Merrett who was born there. In 1662 he wrote "Our wine coopers of recent times use vast quantities of sugar and molasses to all sorts of wines to make them drink brisk and sparkling and to give them spirit".  That's 35 years earlier than the monk Dom Pierre Perignon who discovered champagne.

In 1662 Christopher Merrett published Pinax Rerum Naturalium Britannicarum. That was one of the first lists of English flora, fauna and minerals but was the first to list British birds and butterflies.
